Deep Woods Mushrooms, operated by Greg Carter in Western North Carolina, is a specialized agricultural operation focused on mushroom cultivation, professional foraging, and mycology education. With over 20 years of experience, the business provides a diverse range of mushroom strains including Shiitake, Lion's Mane, Nameko, Reishi, Maitake, Almond Agaricus, Wine Cap, Chestnut, and Oyster varieties. Deep Woods Mushrooms serves a dual purpose as a production farm and an agritourism hub, offering expert-led workshops on inoculation, log-grown cultivation techniques, and wild harvesting. Carter, who holds state certification to supply wild edible mushrooms to local restaurants and professional chefs, has transitioned his core operations toward educational outreach. The farm offers group tours, private consultations, and supplies essential growing materials like spawn plugs for outdoor log-based cultivation. Their mission centers on increasing public awareness regarding fungal ecology, sustainable harvesting practices, and the practical application of home-based mushroom gardening, catering to hobbyists, local chefs, and environmental enthusiasts.

You can’t imagine what a great time we had with Greg w/deep woods mushrooms! He is an expert teacher and a kind hearted man. My best experience ever in the NC mountains!

Unfortunately dry weather did not support a successful wild mushroom hunt but we learned a lot and had a great time. Really enjoyed the mushroom farm tour!

We had such a good time at deep woods mushroom! Me and my husband went for my birthday and got loads of information about mushrooms and how to successfully grow them outside. I have been wanting to try the log grow method and will be ordering some plugs come spring time. We got suggested reading materials for different growing options and foraging. Greg even cooked us up some delicious shitake and oyster mushrooms. I can't wait for next spring!

A great spirit and so much to learn from. I cannot recommend Greg enough to build on your knowledge of foraging fundamentals and mushrooms in the area.

Best tour of the summer! Who knew there was so much to learn about fungi and how to grow them outdoors. We pecked Greg to death with 1000 questions and he was such a gracious and patient teacher! As we enjoyed some Chaga tea, school was in at the picnic table! He has over 25 years of doing this under his belt! During the walking tour part over his 2 acres, we saw a mushroom and asked him what it was and it turns out it was the Death Cap or Widow Maker! And that is why we will be buying mushrooms from Greg at the Brevard Farmers Market! A sautéed sampling of super fresh Shiitake had us buying a big bag to take home for dinner! We also purchased some Maitake garlic salt as Christmas gifts. Don’t let this fun learning opportunity get by you if you’re in the area!
